Cauliflower (Purple) Soup

As a lover of unique color vegetables, I was excited when I saw purple cauliflower at farmers market this week.

I prepared soup adding some celery and onions and the result was simple, light  and tasty soup perfect for a cold winter night.

Ingredients: 
1 cup cauliflower florets
1 stick celery, chop fine
1 small red onion diced
1 tsp grated ginger
1 tsp whole wheat flour
1/2 cup milk
salt and pepper for seasoning
1 tsp olive oil

Procedure:
Wash the cauliflower florets and keep them in salted warm water for 15 minutes
Heat oil and add onion fry for 2 minutes.
Add ginger and celery fry for 2 more minutes then add cauliflower.
Fry for 5 minutes, add flour, mix well. Add 2 cups of water and bring it to boil.
Cover the vessel, simmer the flame and cook for 15 to 20 minutes.
Blend everything well, add milk and seasoning keep it on low flame to heat.
